In the past several years, students’ new found familiarity with the edamame has opened this bean up as a great ingredient for us to be creative with. These vibrant Japanese soybeans add a complete protein and a delightful crunch to the seaweed salad pictured below. Very refreshing!

Here we have a salad packed with antioxidants and flavor. This time the Edamame beans were tossed with fresh pineapple, red cabbage, golden raisins. Sweet, savory and so delicious!
